what I’m meal prepping this week + life updates!

Hello, hello lovely readers! It’s been a while (oops!) Summer has been such a blur, but in a good way. I’ve been enjoying being able to get some much needed rest and relaxation, but also getting to make some good memories and work on achieving some goals. I figure since it’s been a while that I would give you guys a quick life update!

I recently wrapped up with my FIT Academy and took my NETA group exercise instructor’s exam, so hopefully in a few weeks I’ll finally be able to start teaching some group fitness classes! I’m excited to be making this step in my professional life, and my goal is to start studying for my wellness coaching certification next year.

This Sunday I also celebrated Arlyn’s second Gotcha Day – I swear, every time August 4th comes around I’m overwhelmed with how blessed I am to have my crazy dog. I woke up this morning with him on my pillow and even though he hogs all the bed space, I love how cuddly and sweet he is.

Speaking of sweethearts, I finally made things official with the guy I’ve been seeing since April. I say “finally” but I was the one who made him hold off on making it public until now. After how poorly the last couple of relationships went + ended, I figured a little waiting period before the whole world knew never hurt anyone. It’s been refreshing to be dating someone who’s respectful and understands my desire to guard my heart.

Other than that, life is pretty much the same – working, going to the gym – I recently started doing F45 + am trying to transition to a morning workout routine, sos – and still making my way through the 100 Baby Challenge (slowly but surely). I can admit I got a little off track with my diet between travels and get-togethers with friends, but I’m working on being disciplined again.

My semi-vegetarian endeavors have been going well. When I initially began, I was still eating meat on weekends if I went out, but I haven’t purchased meat to have at the house in months. Lately, I haven’t even been eating meat – my weekend “cheats” have been much more vegetarian. The hardest thing to cut out has been cheese, but I’ve been finding some really good alternatives to buy for what I make around the house. I’m currently trying to figure out tofu lol. I probably would have tried sooner, but I was under the impression it would be more expensive and that it wasn’t worth the look – well, needless to say, I was wrong. Now I’m just making sure I can cook it to a consistency/texture that I can enjoy, especially since two of my meals over these next couple of weeks use it!

When I initially started trying to find plant-based recipes, I had better luck with cookbooks because Pinterest felt like the same few recipes over and over, but in recent months it’s been so easy to find creative, yummy recipes to try out! I’m excited about getting to make these this week!
